Slow Cooker Texas Soup

Soups can be very boring. I mean, it’s soup. A liquid substance with some solids thrown in, with a couple of seasonings. Not very filling or appetizing.

But, let me tell you about this soup. It’s satisfying, full of hearty ingredients, and most importantly of all, it is a slow cooker meal. So, you can fix it and forget it. Also, you can make this soup as hot or mild as you like it. For the tomatoes, we like to use the ones with the chilis in them, or you can use plain ones as well. But it is not a true Texas soup if it does not have some spice in it.

Ingredients

2 Cans of Black beans – drained

1 Can of Stewed tomatoes

1 can diced tomatoes RO TEL has a diced tomatoes with green chilies

1 Box Chicken broth

1 Can Mexicorn – drained

2 Cans green chilis (Hot or mild)

2 Tablespoons Minced garlic

1 roll of Jimmy Dean hot sausage (Or mild)

Directions

Cook sausage in a pan until browned. In the slow cooker, toss in everything and the cooked sausage.

Cook on low for four to six hours.

Once down, serve with a dollop of sour cream. This soup is good by itself, or it pairs well with some corn chips and or cornbread.
